  • 4 boneless, skinless chicken breasts
  • 1 cup salsa (mild or spicy)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen sweet corn
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Place the boneless chicken breasts in the bottom of the crockpot.
  2. Pour the salsa over the chicken and layer with black beans.
  3. Add the sweet corn and pour the chicken broth on top.
  4. Sprinkle cumin and chili powder evenly over the ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken using two forks and stir before serving.
