  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 1 cup frozen corn
  • 2 tbsp taco seasoning
  • 4 cups low-sodium chicken broth
  • Fresh cilantro (optional)

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté the diced onion until translucent. Add garlic and cook until fragrant.
  2. Push onions and garlic aside; add ground meat and brown for about 5-7 minutes.
