Ingredients

  • 8 small flour tortillas
  • 1 pound lean ground beef or turkey
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup sour cream
  • 2 green onions, chopped
  • ¼ cup sliced olives (optional)
  • ¼ cup chopped cilantro (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly spray a muffin tin with nonstick spray and press the flour tortillas into each cup.
  3. Bake for about 10 minutes until golden.
  4. In a skillet, brown the ground meat over medium heat; drain fat and mix in half the enchilada sauce.
