  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy (about 3 minutes).
  3. Beat in eggs one at a time, then mix in mascarpone and vanilla until smooth.
  4. In another bowl, whisk together flour, cocoa powder, baking powder, instant coffee granules, and salt.
  5. Gradually add the dry ingredients to the wet mixture until just combined—do not overmix.
  6. Scoop dough onto the prepared baking sheet about two inches apart.
  7. Bake for 10-12 minutes, until edges are set but centers are soft.
