Ingredients

  • 1 lb Italian sausage (spicy or sweet)
  • 3 bell peppers (mixed colors)
  • 1 large yellow onion
  • 4 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice sausages into bite-sized pieces and chop bell peppers and onion into strips.
  3. In a large bowl, combine sausages, peppers, onions, minced garlic, olive oil, oregano, basil, salt, and pepper; toss to coat evenly.
  4. Spread the mixture on a parchment-lined sheet pan in a single layer.
  5. Bake for 25-30 minutes, stirring halfway through, until sausages are browned and vegetables are tender.
