  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium zucchini, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 cup small pasta (like ditalini)
  • 2 cups fresh spinach or kale, chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent. Add minced garlic and cook until fragrant.
  2. Stir in diced carrots and celery; sauté for about five minutes.
  3. Add diced zucchini, canned tomatoes, and vegetable broth. Bring to a gentle simmer.
  4. Mix in rinsed beans and pasta; cook until pasta is tender (about eight minutes).
  5. Stir in chopped spinach or kale along with oregano and basil; simmer for two more minutes.
