  • 1 lb large raw shrimp, peeled
  • 2 packs instant ramen noodles (discard seasoning)
  • 4 cloves garlic, minced
  • 2 tsp Cajun seasoning (adjust to taste)
  • 3 cups low-sodium vegetable broth
  • 1/4 cup green onions, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice

Instructions

  1. Heat olive oil in a skillet over medium heat. Add shrimp and sprinkle with Cajun seasoning. Cook until pink and opaque, about 3-4 minutes.
  2. Stir in minced garlic and cook until fragrant, about 1 minute. Pour in vegetable broth and bring to a simmer.
  3. Add ramen noodles to the simmering broth and cook according to package instructions, usually about 3-4 minutes.
  4. Just before serving, squeeze lemon juice over the noodles and toss in sliced green onions.
  5. Serve hot, garnished with additional green onions if desired.
