Ingredients

  • 8 oz lo mein noodles
  • 2 tbsp vegetable oil
  • 1 cup mixed fresh vegetables (bell peppers, carrots, snap peas)
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • 1 cup cooked protein (chicken, shrimp, or tofu) – Optional

Instructions

  1. Cook the lo mein noodles according to package instructions until al dente. Drain and set aside.
  2. In a large wok or skillet over medium-high heat, add vegetable oil. Once hot, sauté minced garlic and mixed vegetables until just tender.
  3. If using protein, add it now and stir-fry until heated through.
  4. Toss the drained noodles into the wok with the sautéed vegetables. Add soy sauce and sesame oil; gently mix until well combined.
  5. Taste and adjust seasoning if necessary. Garnish with chopped green onions before serving.
