  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup cremini mushrooms, sliced
  • 1 can (14 oz) diced tomatoes in juice
  • 4 cups vegetable broth
  • 2 tsp dried Italian herbs (oregano, basil, thyme)
  • 6 no-boil lasagna sheets, broken into pieces
  • 2 cups fresh spinach or kale
  • 2 tbsp nutritional yeast (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions for about 5 minutes until translucent.
  2. Add minced garlic and sauté for an additional 30 seconds until fragrant.
  3. Stir in zucchini, bell pepper, and mushrooms; cook for about 4-5 minutes until softened.
  4. Pour in canned tomatoes and vegetable broth; bring to a simmer.
  5. Add dried Italian herbs and let them infuse for 2-3 minutes.
  6. Break lasagna sheets into smaller pieces and stir into the pot. Cook according to package instructions until al dente.
  7. In the last minute of cooking, add spinach or kale until wilted.
