Ingredients

  • Fresh raspberries
  • Roasted unsalted pistachios
  • Heavy cream
  • Granulated sugar
  • Gelatin powder
  • Vanilla extract

Instructions

  1. Purée fresh raspberries and strain to achieve a smooth texture. Reserve some whole berries for garnish.
  2. In a mixing bowl, whip heavy cream until soft peaks form, taking care not to overwhip.
  3. Gently fold the raspberry purée into the whipped cream along with sugar and vanilla extract until well combined.
  4. Dissolve gelatin powder in warm water and stir into the raspberry mixture.
  5. Spoon the mousse into cake molds, tapping lightly to remove air bubbles.
  6. Chill in the refrigerator for at least 4 hours or overnight until set.
