  • 8 oz ribeye steak
  • 4 cups mixed greens (baby spinach, arugula, romaine)
  • ½ cup blue cheese crumbles
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, thinly sliced
  • 3 tbsp balsamic vinaigrette

Instructions

  1. Sear the seasoned ribeye steak in a hot skillet for 4-5 minutes on each side until browned. Cook to medium-rare.
  2. Remove the steak and let it rest for 5 minutes before slicing against the grain into thin strips.
  3. While the steak rests, wash and dry the mixed greens.
  4. In a large bowl, combine greens, sliced steak, cucumber, cherry tomatoes, and blue cheese crumbles.
  5. Drizzle with balsamic vinaigrette just before serving.
