  • 2 cups fresh strawberries (sliced)
  • 1/4 cup powdered sugar (for topping)
  • Zest of 1 lemon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9 inch baking dish with nonstick spray or parchment paper.
  2. In a large bowl, mix flour, baking powder, sugar, and salt. Cut in the cold butter until crumbly.
  3. In another bowl, combine heavy cream and vanilla extract. Gradually add to the dry mixture until just combined; do not overmix.
  4. Pour batter into the prepared dish and spread evenly. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  5. While cooling, sprinkle sliced strawberries with sugar to release juices. Whip the heavy cream until soft peaks form; add powdered sugar and lemon zest gently.
  6. Once cooled, cut shortcake into squares. Layer with strawberries and top with whipped cream.
