  • Zest and juice of 2 fresh lemons
  • 1 cup fresh blueberries
  • 2 large eggs
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/4 cup unsalted butter (melted and cooled)
  • 1 tsp vanilla extract

Instructions

  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until combined.
  3. Add lemon zest and juice to the dry mixture.
  4. In another bowl, mix eggs, melted butter (cooled), sour cream, and vanilla until smooth.
  5. Gently fold the wet ingredients into the dry mixture until just combined; avoid overmixing.
  6. Carefully fold in blueberries without squishing them.
  7. Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
