Ingredients

  • 2 salmon fillets (6 oz each)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes (about 1/4 cup)
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • 4 cups mixed greens (arugula, spinach, etc.)
  • 1 cup cherry tomatoes, halved
  • 1/4 medium red onion, thinly sliced
  • Salt & pepper to taste

Instructions

  1. In a bowl, whisk together olive oil, lime juice, minced garlic, salt, and pepper. Coat the salmon fillets in this marinade and let sit for 15-20 minutes.
  2. Preheat your grill to medium-high heat (about 400°F / 200°C).
  3. Grill the marinated salmon skin-side down for 4-6 minutes per side until flaky and cooked through.
  4. While grilling, combine mixed greens, cherry tomatoes, red onion, and cilantro in a large bowl. Drizzle with olive oil and lime juice; toss gently.
  5. Flake the grilled salmon over the salad mixture and garnish with additional cilantro if desired.
