  • 1 cup orzo pasta
  • 1 can (15 oz) creamed corn
  • 1 lb fresh salmon fillet (skinless)
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook orzo in a large pot of salted boiling water for about 8 minutes until al dente, stirring occasionally.
  2. In a large skillet, melt butter over medium heat. Sauté minced garlic for one minute until fragrant.
  3. Stir in creamed corn until heated through to create a silky sauce.
  4. Drain the orzo (do not rinse) and add it to the skillet with the creamed corn mixture. Stir well.
  5. Place the salmon on top of the pasta mixture, cover, and cook on low heat for 5 to 7 minutes until cooked through.
  6. Sprinkle Parmesan cheese over the dish before serving.
