  • 2 medium-sized fresh beets
  • 8 oz (226g) soft goat cheese
  • 2 tbsp chopped fresh herbs (such as parsley or dill)
  • 1/4 cup (30g) toasted walnuts, roughly chopped
  • 1 tbsp honey

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in foil and roast for 45-60 minutes until tender. Let them cool before peeling.
  2. In a mixing bowl, combine softened goat cheese, chopped herbs, and honey. Mix until smooth.
  3. Chop peeled beets into small pieces and blend in a food processor until smooth but slightly chunky.
  4. Gently fold the beet puree into the goat cheese mixture until swirled.
  5. Spoon the mixture onto plastic wrap, shape it into a log, twist ends securely, and refrigerate for at least two hours.
