  • 14 oz firm tofu, drained and pressed
  • 4 cups green cabbage, chopped
  • 1 cup bell peppers, sliced (any color)
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • ¼ cup vegetable broth
  • 2 green onions, chopped

Instructions

  1. Prepare the tofu by draining it thoroughly and patting it dry.
  2. Chop all the vegetables while the tofu dries.
  3. Heat a large skillet or wok over medium-high heat; add vegetable broth.
  4. Sauté minced garlic and grated ginger for 30 seconds until fragrant.
  5. Add cubed tofu and cook until slightly browned.
  6. Incorporate cabbage and bell peppers; stir-fry for about 5-7 minutes until tender-crisp.
  7. Pour in soy sauce and sesame oil; toss to combine and heat through. Serve hot.
