  • 1 lb ribeye or sirloin steak
  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 4 cups mixed greens (arugula, spinach, kale)
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • 3 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown.
  2. While the sweet potatoes roast, season the steak with salt and pepper. Heat a skillet over medium-high heat and cook the steak for about 4-5 minutes per side for medium-rare doneness. Let it rest before slicing thinly.
  3. In a bowl, whisk together balsamic vinegar and olive oil. In a large bowl, combine mixed greens, cherry tomatoes, red onion, roasted sweet potatoes, feta cheese, and sliced steak. Drizzle dressing over the salad and toss gently.
