Ingredients

  • Ground chicken
  • Ricotta cheese
  • Fresh spinach
  • Parmesan cheese
  • Garlic cloves
  • Italian seasoning
  • Olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and coat a baking dish with nonstick spray.
  2. In a bowl, mix ground chicken, ricotta, minced garlic, Italian seasoning, salt, pepper, and half of the Parmesan until combined.
  3. Form 1-inch meatballs and arrange in the baking dish.
  4. Bake for 25-30 minutes or until golden brown and internal temperature reaches 165°F (74°C).
  5. In a skillet over medium heat, sauté minced garlic in olive oil for 1 minute; add fresh spinach until wilted.
