  • 4 medium sweet potatoes (about 1.5 lbs)
  • 1 lb lean ground beef or turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 2 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Sour cream (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes and prick them with a fork.
  2. Wrap each potato in foil and bake for about 45 minutes until tender.
  3. In a skillet over medium heat, sauté chopped onions in oil until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  4. Add ground meat, cooking until browned (7-10 minutes).
  5. Stir in ketchup, mustard, Worcestershire sauce, chili powder, salt, and pepper; cook for an additional 5 minutes.
  6. Carefully unwrap baked sweet potatoes and slice them open lengthwise. Fill each with the sloppy joe mixture.
  7. Optional: Top with cheese and return to the oven for another 5 minutes to melt cheese.
  8. Serve warm with a dollop of sour cream if desired.
