  • 8 oz spaghetti or linguine
  • 1 lb shrimp, peeled and deveined
  • 1 cup pesto sauce
  • 1 cup cherry tomatoes, halved
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add shrimp and cook until pink and opaque (about 3-4 minutes).
  3. Add halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until softened.
  4. Reduce heat to low and stir in pesto sauce until evenly coated.
  5. Gently fold in the cooked pasta and freshly grated Parmesan cheese until well combined.
  6. Serve hot, garnished with extra Parmesan and red pepper flakes if desired.
