  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach leaves
  • 1 cup ricotta cheese
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 2 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. Pound each chicken breast to about ½ inch thick between plastic wrap.
  3. In a bowl, combine spinach, ricotta, parmesan, garlic powder, salt, and pepper until well mixed.
  4. Spread the filling evenly over each chicken breast and roll tightly, securing with toothpicks if necessary.
  5. Place rolled chicken seam-side down in the baking dish, drizzle with olive oil and sprinkle paprika on top.
  6. Bake for 25-30 minutes until golden brown and cooked through.
  7. Let rest for 5 minutes before slicing into rounds. Serve warm with your choice of sides.
