Ingredients

  • 1 cup quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 tbsp olive oil
  • 1 tsp cumin powder
  • Salt & pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a pot, combine quinoa with 2 cups water or vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until fluffy.
  2. While quinoa cooks, dice bell pepper and onion. Chop cilantro.
  3. In a large bowl, mix cooked quinoa, black beans, bell pepper, onion, and cilantro.
  4. Whisk together lime juice, olive oil, cumin powder, salt, and pepper in a small bowl.
  5. Pour dressing over the salad and toss to coat evenly. Let sit for 10 minutes before serving.
