  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar
  • 1 egg yolk
  • ½ cup jam or preserve (your choice)

Instructions

  1. In a large mixing bowl, combine the flour and sugar. Add the cold butter cubes and mix until the texture resembles coarse crumbs. Stir in the egg yolk until combined.
  2. Shape the dough into a ball, flatten slightly, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  3. Preheat your oven to 350°F (175°C).
  4. Roll out the chilled dough on a floured surface to about an eighth-inch thickness. Cut out circles using a round cutter or glass rim about two inches in diameter.
  5. Place the dough circles into greased muffin tins. Spoon about half a teaspoon of jam into each shell without overfilling.
  6. Bake for approximately 18-20 minutes or until golden brown. Allow to cool before serving.
