  • 1 lb lean ground beef
  • 6 corn or flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 cup salsa
  • 1 bell pepper, diced (red or yellow)
  • 1 medium onion, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup canned black beans, rinsed
  • 2 tbsp olive oil
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Gather all ingredients.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until soft (about 5 minutes).
  3. Add ground beef; cook until browned. Stir in cumin, chili powder, salt, black beans, and half the salsa. Simmer for 5-7 minutes.
  4. In a baking dish, layer some salsa at the bottom. Add tortillas, half the meat mixture, and cheese. Repeat layers until all ingredients are used.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes until cheese is bubbly.
  6. Let cool for 10 minutes before slicing. Garnish with fresh cilantro if desired.
