  • 1 cup whole wheat flour
  • 1/2 cup pure maple syrup
  • 1/4 cup Greek yogurt
  • 1/4 cup milk (or nut milk)
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pierce sweet potatoes with a fork and bake until tender, about 45 minutes. Once cool, mash in a bowl.
  3. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. In the mashed sweet potato bowl, add eggs, Greek yogurt, maple syrup, and milk; mix until combined.
  5. Gently fold dry ingredients into the wet mixture until just combined—lumps are okay!
  6. Fill muffin tins two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 5 minutes before transferring to a wire rack.
