Ingredients

  • 1 lb thinly sliced ribeye or flank steak
  • 1 cup sliced bell peppers (red and green)
  • 1/2 cup sliced sweet onion
  • 1 cup provolone cheese, shredded
  • 4 keto tortillas
  • 2 tsp olive oil

Instructions

  1. Heat a skillet over medium-high heat and add olive oil. Sauté seasoned beef until browned.
  2. Add bell peppers and onions; cook until tender and caramelized, about 5 minutes.
  3. Combine beef and veggies in the skillet for one minute, then remove from heat.
  4. Lay a keto tortilla flat; add a generous portion of the beef-veggie mix topped with provolone cheese. Roll tightly like a burrito.
  5. Place seam-side down on a lined baking sheet. Bake at 375°F (190°C) for 10-15 minutes until golden brown.
  6. Let cool slightly before slicing diagonally. Serve hot.
