Ingredients

  • Rigatoni pasta
  • Italian sausage (spicy or sweet)
  • Canned diced tomatoes
  • Onion
  • Garlic
  • Olive oil
  • Fresh basil
  • Parmesan cheese
  • Salt & pepper

Instructions

  1. Cook rigatoni in salted boiling water until al dente. Drain and keep warm.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent, then add minced garlic and sauté until fragrant.
  3. Crumble the Italian sausage into the skillet, cooking until browned and no pink remains.
  4. Stir in canned diced tomatoes with their juices, season with salt and pepper, and let simmer for 10 minutes.
  5. Fold cooked rigatoni into the sauce mixture, adding pasta water for desired consistency.
  6. Mix in chopped fresh basil before serving. Top with grated parmesan cheese.
