Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups mixed salad greens (spinach and arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, diced
  • 1/2 red onion, thinly sliced
  • 2 tbsp fresh lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat.
