  • 4 medium Yukon Gold potatoes, thinly sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup low-sodium beef broth
  • 1/2 cup sour cream
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1 cup diced carrots or peas (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté onion in oil until translucent. Add garlic and cook until fragrant.
  3. Brown the ground beef in the skillet until no longer pink; drain excess fat as needed.
  4. Stir in salt, pepper, paprika, and broth; simmer for about five minutes.
  5. In a greased casserole dish, layer half of the potatoes followed by half of the beef mixture. Repeat layers, finishing with potatoes on top.
  6. Pour sour cream over the final potato layer and sprinkle with cheddar cheese. Cover with foil and bake for 45 minutes; remove foil and bake an additional 15 minutes until golden brown.
