  • 2 lbs Yukon Gold potatoes
  • 46 strips thick-cut bacon
  • ½ cup red onion (finely diced)
  • ½ cup white vinegar
  • ¼ cup Dijon mustard
  • Salt and pepper (to taste)
  • ¼ cup fresh parsley (chopped)

Instructions

  1. Wash and quarter the Yukon Gold potatoes. Boil in salted water until fork-tender, about 15-20 minutes. Drain but do not rinse.
  2. While potatoes cook, fry chopped bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain excess grease.
  3. In a bowl, whisk together white vinegar, Dijon mustard, salt, and pepper.
  4. Stir in diced onion and crispy bacon into the dressing.
  5. Gently fold in the warm potatoes until well coated.
  6. Sprinkle chopped parsley on top and toss gently before serving.
