  • 23 pounds boneless pork loin
  • 5 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat (400°F).
  2. In a bowl, combine minced garlic, rosemary, thyme, olive oil, lemon juice, salt, and pepper.
  3. Place the pork loin in a resealable bag or shallow dish; pour marinade over it. Let marinate for at least 30 minutes (overnight preferred).
