  • 2 tbsp Cajun seasoning
  • 1 large sweet onion, chopped
  • 1 cup bell peppers (mixed colors), diced
  • 2 celery stalks, chopped
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, celery, and bell peppers until softened.
  2. Push the vegetables aside and add the chicken breasts. Sprinkle with Cajun seasoning, cooking until golden brown on both sides.
