  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 medium zucchinis, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Prepare all ingredients by chopping the vegetables and dicing the chicken into bite-sized pieces.
  2. Heat a splash of oil in a large pan over medium-high heat. Add the chicken and cook until golden brown (about 5 minutes). Remove from the pan.
  3. In the same pan, sauté onion and garlic until translucent.
  4. Add zucchini and bell peppers to the pan; stir-fry for about 3 minutes until slightly softened.
  5. Return the chicken to the pan and mix well.
  6. Combine soy sauce, sesame oil, and cornstarch mixture in a bowl; pour over stir fry while stirring continuously until thickened.
  7. Serve hot over rice or noodles.
