  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp taco seasoning
  • 8 corn tortillas, cut into triangles
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • Fresh cilantro
  • Sour cream

Instructions

  1. Preheat oven to 350°F (175°C). In a skillet over medium heat, brown the ground beef until no longer pink (5-7 minutes). Drain excess fat.
  2. Stir in black beans, diced tomatoes, and taco seasoning; cook for an additional 2 minutes.
  3. In a greased baking dish, layer half of the tortilla triangles, followed by half of the beef mixture and a sprinkle of cheese. Repeat the layers.
  4. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  5. Garnish with fresh cilantro and dollops of sour cream before serving.
