- 3 overripe bananas
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 tsp baking soda
- ¼ tsp salt
- 2 large eggs
- ¼ cup unsalted butter (melted)
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In another bowl, mash the overripe bananas until smooth.
- Stir melted butter into mashed bananas, then mix in eggs and vanilla until combined.
- Gently fold the wet mixture into the dry ingredients until just combined; lumps are okay.
- Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 12-15 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool for 5 minutes before transferring to a wire rack.
