Description

Banana Bread Bites are delectable mini treats, perfectly sweet and moist, making them an ideal snack or dessert for any occasion.


Ingredients

  • 3 overripe bananas
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • ¼ cup unsalted butter (melted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. In another bowl, mash the overripe bananas until smooth.
  4. Stir melted butter into mashed bananas, then mix in eggs and vanilla until combined.
  5. Gently fold the wet mixture into the dry ingredients until just combined; lumps are okay.
  6. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  7. Bake for 12-15 minutes or until golden brown and a toothpick comes out clean.
  8. Allow to cool for 5 minutes before transferring to a wire rack.
