  • 4 Tasmanian salmon fillets (6 oz each)
  • 1 lb asparagus spears
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried thyme (or fresh thyme, if available)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat salmon fillets dry and arrange on one side of the baking sheet.
  3. In a bowl, mix olive oil, lemon juice, garlic, thyme, salt, and pepper.
  4. Toss asparagus in half of the mixture and place on the other side of the baking sheet. Drizzle remaining mixture over salmon.
  5. Bake for 15-20 minutes or until salmon flakes easily with a fork.
