  • 1 lb lean ground beef
  • 1 cup breadcrumbs
  • 1/4 cup fresh cilantro, chopped
  • 1 large egg
  • 1 cup enchilada sauce (divided)
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • 1/2 cup sour cream (for serving)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix ground beef, breadcrumbs, chopped cilantro, egg, and half of the enchilada sauce until well combined.
  3. Form the mixture into golf ball-sized meatballs and place on a lined baking sheet with space between each.
  4. Bake for 20 minutes or until browned and cooked through (internal temperature should reach 160°F/70°C).
  5. Pour remaining enchilada sauce over meatballs and sprinkle with shredded cheese.
  6. Broil for an additional 5 minutes until cheese is bubbly.
