  • 1 can (15 oz) black beans, rinsed and drained
  • 2 large eggs
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a food processor, blend the rinsed black beans, eggs, cocoa powder, maple syrup, vanilla extract, baking powder, and salt until smooth.
  3. Gently fold in the dark chocolate chips with a spatula.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 25-30 minutes or until slightly underdone in the center.
  6. Allow to cool for 10 minutes before lifting out and cutting into squares.
