  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • 2 large eggs
  • 1 cup all-purpose flour
  • 8 oz mascarpone cheese
  • ½ cup brewed espresso or strong coffee
  • 1 tsp vanilla extract
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  2. Melt the butter and chocolate in a saucepan over low heat, stirring until smooth.
  3. Remove from heat and whisk in sugar, then add eggs one at a time.
  4. Fold in cocoa powder and flour until no dry bits remain, then mix in brewed espresso.
  5. In another bowl, combine mascarpone cheese with vanilla extract until smooth. Spread over brownie batter and swirl gently.
