  • 1/2 cup unsalted butter (softened)
  • 1/3 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1/2 cup brown sugar (packed)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup dark chocolate (chopped, for ganache)
  • 1/4 cup heavy cream (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. To make the shortbread base, mix softened butter and granulated sugar until creamy. Add flour and mix until crumbly. Press into the bottom of the prepared pan.
  3. Bake for 15-20 minutes until golden around the edges.
  4. For the brownie batter, melt butter and brown sugar in a saucepan over low heat. Stir in cocoa powder. Remove from heat, whisk in eggs and vanilla.
  5. Gently fold in flour and salt until combined. Pour over cooled shortbread layer.
  6. Bake for another 25-30 minutes until a toothpick inserted comes out slightly moist.
  7. For the ganache, heat heavy cream until simmering and pour over chopped chocolate; let sit for 5 minutes before stirring smooth.
  8. Once brownies are cool, spread ganache on top and chill for an hour before slicing into bars.
