  • 4 boneless, skinless chicken breasts
  • 2 cups crushed pretzel bites
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 tbsp Dijon mustard
  • 1 cup shredded sharp cheddar cheese
  • ½ cup heavy cream
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper.
  3. In one bowl, beat eggs; in another, crush pretzel bites into fine crumbs.
  4. Dip each chicken breast in eggs, then coat with pretzel crumbs followed by panko breadcrumbs.
  5. Place coated chicken on the baking sheet and bake for 25-30 minutes until golden brown and cooked through (internal temperature of 165°F/74°C).
  6. For the sauce, melt butter in a saucepan over medium heat; whisk in mustard and heavy cream until smooth. Stir in cheese until melted.
  7. Drizzle sauce over chicken before serving.
