Description

Ingredients

  • 4 tilapia fillets (about 6 oz each)
  • 1 cup panko breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • Zest of 1 lemon
  • 1 tsp garlic powder
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix panko breadcrumbs, parsley, dill, lemon zest, garlic powder, salt, and pepper.
  3. Pat tilapia fillets dry and drizzle both sides with olive oil. Coat them in the breadcrumb mixture.
  4. Arrange fillets on the prepared baking sheet with space in between.
  5. Bake for 12-15 minutes until golden brown and fish flakes easily with a fork.
  6. Serve warm with a side salad or roasted vegetables.
