  • 2 cups elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup whole milk
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a medium saucepan, melt butter over medium heat. Whisk in flour until smooth, then gradually add milk until thickened. Stir in cheddar cheese until melted.
  3. Fold cooked macaroni into the cheese sauce until well coated. Season with garlic powder, paprika, salt, and pepper.
  4. Transfer the mixture to a shallow dish, press down slightly, cover with plastic wrap, and refrigerate for at least 1 hour.
  5. Once chilled, scoop out portions and roll into 1-inch balls. Dip each ball into beaten eggs and coat with panko breadcrumbs.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry bites in batches for about 3-4 minutes or until golden brown. Drain on paper towels.
