- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
- In a medium saucepan, melt butter over medium heat. Whisk in flour until smooth, then gradually add milk until thickened. Stir in cheddar cheese until melted.
- Fold cooked macaroni into the cheese sauce until well coated. Season with garlic powder, paprika, salt, and pepper.
- Transfer the mixture to a shallow dish, press down slightly, cover with plastic wrap, and refrigerate for at least 1 hour.
- Once chilled, scoop out portions and roll into 1-inch balls. Dip each ball into beaten eggs and coat with panko breadcrumbs.
- Heat oil in a deep fryer or large pot to 350°F (175°C). Fry bites in batches for about 3-4 minutes or until golden brown. Drain on paper towels.
