  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup unsweetened coconut flakes
  • 1/2 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup vegetable oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C) if baking.
  2. Cut the chicken breasts into strips approximately 1 inch wide.
  3. Set up three shallow bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with coconut flakes.
