Description

  • 2 medium zucchinis (about 4 cups shredded)
  • 1 cup all-purpose flour (or whole wheat flour)
  • 2 large eggs
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh herbs (dill or parsley)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Grate zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, mix grated zucchini, flour, eggs, Parmesan cheese, herbs, garlic powder, salt, and pepper until well combined.
  3. Shape the mixture into small patties using about two tablespoons per fritter.
  4. Preheat the air fryer to 375°F (190°C) for five minutes.
  5. Place fritters in the air fryer basket in a single layer and cook for 10-12 minutes until golden brown, flipping halfway through.
  6. Remove fritters and serve warm with your choice of dipping sauce.
