Ingredients

Scale
  • 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh spinach
  • 1 can (14 oz) marinated artichoke hearts, drained
  • 12 oz penne or fusilli pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve some pasta water before draining.
  2. Sauté the chicken: Heat olive oil in a skillet over medium heat. Cook chicken breasts for 6-7 minutes per side until golden brown. Remove from skillet and let rest before slicing.
  3. Make the sauce base: In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add heavy cream and stir.
  4. Add spinach and artichokes: Toss in fresh spinach and drained artichoke hearts; cook until spinach wilts (2-3 minutes).
  5. Combine everything: Add cooked pasta and grated Parmesan to the skillet, stirring until well coated in sauce.
  6. Serve hot: Plate your Spinach Artichoke Pasta with Chicken and sprinkle with extra Parmesan if desired.
