Ingredients

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • 2 tbsp olive oil
  • Salt, pepper, and paprika to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for about 5 minutes on each side or until golden brown. Remove from skillet and set aside.
  2. In the same skillet, sauté garlic and onion for 3 minutes until fragrant.
  3. Pour in chicken broth and scrape any brown bits from the pan. Let it simmer briefly.
  4. Stir in heavy cream, then add uncooked rice, ensuring it’s well coated with the sauce. Cover tightly with a lid.
  5. Reduce heat to low and simmer for about 20 minutes or until the rice is cooked through. Serve hot straight from the skillet.
