- 3 cloves fresh garlic, minced
- 1 medium yellow onion, chopped
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup long-grain white rice
- 2 tbsp olive oil
- Salt, pepper, and paprika to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for about 5 minutes on each side or until golden brown. Remove from skillet and set aside.
- In the same skillet, sauté garlic and onion for 3 minutes until fragrant.
- Pour in chicken broth and scrape any brown bits from the pan. Let it simmer briefly.
- Stir in heavy cream, then add uncooked rice, ensuring it’s well coated with the sauce. Cover tightly with a lid.
- Reduce heat to low and simmer for about 20 minutes or until the rice is cooked through. Serve hot straight from the skillet.
