- 1 lb fresh shrimp, peeled and deveined
- 1 cup frozen peas
- 4 cups low-sodium chicken broth (warmed)
- 1 cup white wine
- 1/2 cup freshly grated Parmesan cheese
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, heat olive oil. Sauté chopped onion and minced garlic until fragrant.
- Add Arborio rice and toast for about 2 minutes until slightly transparent.
- Pour in white wine and stir until absorbed.
- Gradually add warm chicken broth one ladle at a time, stirring frequently until each ladle is absorbed before adding more.
- When the rice is al dente, stir in shrimp and peas. Cook until shrimp turns pink, about 4-5 minutes.
- Remove from heat and mix in butter and Parmesan until melted. Adjust seasoning if needed.
