  • 1 cup Arborio rice
  • 1 lb fresh shrimp, peeled and deveined
  • 1 cup frozen peas
  • 4 cups low-sodium chicken broth (warmed)
  • 1 cup white wine
  • 1/2 cup freshly grated Parmesan cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, heat olive oil. Sauté chopped onion and minced garlic until fragrant.
  2. Add Arborio rice and toast for about 2 minutes until slightly transparent.
  3. Pour in white wine and stir until absorbed.
  4. Gradually add warm chicken broth one ladle at a time, stirring frequently until each ladle is absorbed before adding more.
  5. When the rice is al dente, stir in shrimp and peas. Cook until shrimp turns pink, about 4-5 minutes.
  6. Remove from heat and mix in butter and Parmesan until melted. Adjust seasoning if needed.
