Description

Indulge in the comforting goodness of Parmesan Risotto, a creamy Italian classic that’s perfect for any occasion. This dish combines Arborio rice with rich Parmesan cheese, aromatic garlic, and sweet onions, creating a velvety texture that warms the soul. Whether you’re hosting a family dinner or enjoying a quiet night in, this risotto promises to impress with its delightful flavor and gourmet appeal.

Ingredients

Scale
  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth (low-sodium)
  • 1 cup freshly grated Parmesan cheese
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • ½ cup dry white wine (e.g., Sauvignon Blanc)
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley (optional for garnish)

Instructions

  1. Heat the broth in a saucepan over low heat to keep it warm.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onions until translucent, about 5 minutes.
  3. Add minced garlic and sauté briefly until fragrant. Avoid browning the garlic.
  4. Stir in Arborio rice and toast for about 2 minutes until coated.
  5. Pour in white wine and let it simmer until absorbed by the rice.
  6. Gradually add warm broth one cup at a time, stirring frequently until each addition is absorbed—this should take about 20 minutes.
  7. Once the rice is al dente, remove from heat and stir in Parmesan cheese and butter until creamy. Season as desired.
  8. Serve immediately, garnished with fresh parsley if using.
